Jerk Pork with Mango Salsa
Serves 14:
Ingredients:
- 1 medium onion, coarsely chopped
- 1 bunch green onions, coarsely chopped
- 3 garlic cloves
- 2 jalapeno pepes, seeded
- 3 Tbsp fresh or 1 Tbsp dried thyme
- 1 1/2 tbsp brown sugar
- 1 1/2 tsp salt
- 1 1/2 tsp pepper
- 1 1/2 tsp ground allspice
- 3/4 tsp ground cinnamon
- 1/4 tspground nutmeg
- 2 (3-pound) rolled boneless pork loin roasts
- Mango Salsa
- Garnish: chile peppers, fresh thyme springs, fresh oregano sprigs
Directions:
Step 1:
- Process first 11 ingredients in the food processor until filely chopped.
- Place roasts in a heavy-duty zip top bag
- Add onion mixture
- Seal bag
- Turn and squeeze to coat roasts
- Chill overnight or up to 2 days turning occasionally
Step 2:
- Remove roasts from plastic bag and place in a roasting pan
- Bake at 475 degrees for 20 minutes
- Reduce temperature to 375 degrees
- Bake 40 minutes or until meat thermometer inserts into thickest portion registers 140 degrees.
- Cool slightly and wrap in aluminum foil
- Chil up to 8 hours
Step 3:
- Gril roasts, covered with grill lid, over medium heat (300 degrees to 350 degrees) 20 to 25 minutes or until meat themometer registers 160 degrees.
- Cut into 1/2 inch thick slices
- Serve wiht Mango Salsa
