Jerk Pork with Mango Salsa

Serves 14:

Ingredients:

  1. 1 medium onion, coarsely chopped
  2. 1 bunch green onions, coarsely chopped
  3. 3 garlic cloves
  4. 2 jalapeno pepes, seeded
  5. 3 Tbsp fresh or 1 Tbsp dried thyme
  6. 1 1/2 tbsp brown sugar
  7. 1 1/2 tsp salt
  8. 1 1/2 tsp pepper
  9. 1 1/2 tsp ground allspice
  10. 3/4 tsp ground cinnamon
  11. 1/4 tspground nutmeg
  12. 2 (3-pound) rolled boneless pork loin roasts
  13. Mango Salsa
  14. Garnish: chile peppers, fresh thyme springs, fresh oregano sprigs

Directions:

Step 1:

  • Process first 11 ingredients in the food processor until filely chopped.
  • Place roasts in a heavy-duty zip top bag
  • Add onion mixture
  • Seal bag
  • Turn and squeeze to coat roasts
  • Chill overnight or up to 2 days turning occasionally

Step 2:

  • Remove roasts from plastic bag and place in a roasting pan
  • Bake at 475 degrees for 20 minutes
  • Reduce temperature to 375 degrees
  • Bake 40 minutes or until meat thermometer inserts into thickest portion registers 140 degrees.
  • Cool slightly and wrap in aluminum foil
  • Chil up to 8 hours

Step 3:

  • Gril roasts, covered with grill lid, over medium heat (300 degrees to 350 degrees) 20 to 25 minutes or until meat themometer registers 160 degrees.
  • Cut into 1/2 inch thick slices
  • Serve wiht Mango Salsa
